Tortellini Soup

Ingredients
2 pounds ground turkey
1 medium onion
4 cloves garlic
1 Tbsp Italian Seasoning
2 Tbsp tomato paste
5 cups chicken broth
1 Tbsp cornstarch
9 oz tortellini
2/3 cup heavy cream
2 cups spinach
salt and pepper to taste
Directions
Brown turkey in a large Dutch oven.
Add Italian seasoning, onion, and carrots and cook until onions are translucent.
Add the garlic and cook for 30 seconds.
Stir in the tomato paste.
Stir in the cornstarch and add the broth. Bring to a boil and simmer 20 - 30 minutes.
Add the tortellini and bring the soup back to a boil.
Add the spinach and the cream. Cook long enough for the spinach to wilt, then serve.
Season with salt and pepper, as desired.
